Plant based cuisine Virgin Islands sailboat charter Bel Ami. Far as a whole food, plant-based meal, we just finished eating a fabulous vegan pasta meal: This provided more than enough for two people plus leftovers:
Cook up the pasta of your choice.
4 cloves of garlic, minced
1/2 cup onion, finely chopped
1 small hot pepper
1 medium green pepper, diced.
1/2 cup water
1 14.5 oz can of ready-cut diced tomatoes
1/4 cup red wine
1 TBS capers
salt and pepper to taste
1/2 tsp sugar
1/2 lime juiced
1/2 tsp dried oregano
1/2 tsp dried basil
Saute the garlic, onion and hot pepper in 1/2 cup water for about 10-15 minutes, low heat in non-stick frying pan. Add more water as needed. Add green pepper and cook additional 2 minutes. Transfer to small saucepan, and add can of diced tomatoes, red wine, capers, sugar and lime juice, and cook over low heat for 15 minutes. Add salt and pepper to taste. Add remainder of ingredients. Mix with cooked pasta and serve with tossed salad.
