If you have always wanted to sailing the Virgin Islands and enjoy plant-based cuisine on your sailboat charter, then you are in luck! The wonderful S/Y Bel Ami not only has a great captain onboard, but a chef ready to bring the best in plant-based cuisine.
Below is a recipe loved and recommended by the crew aboard Bel Ami, and will give you a great insight into what you may eat on your sailboat charter!
Sauce:
4 cloves of garlic, minced
1/2 cup onion, finely chopped
1 small hot pepper
1 medium green pepper, diced.
1/2 cup water
1 14.5 oz can of ready-cut diced tomatoes
1/4 cup red wine
1 TBS capers
salt and pepper to taste
1/2 tsp sugar
1/2 lime juiced
1/2 tsp dried oregano
1/2 tsp dried basil
Just like you would, aboard your sailboat charter Saute the garlic, onion and hot pepper in 1/2 cup water for about 10-15 minutes, low heat in a non-stick frying pan. Add more water as needed. Add green pepper and cook an additional 2 minutes. Transfer to a small saucepan, and add can of diced tomatoes, red wine, capers, sugar, and lime juice, and cook over low heat for 15 minutes. Add salt and pepper to taste. Add the remainder of ingredients. Mix with cooked pasta and serve with a tossed salad. Combined this plant-based cuisine with a wonderful dessert and you are in paradise.
